Cherry Pudding

2 tablespoons shortening
3/4 cup sugar
3 cups flour
2 eggs
1/2 teaspoon salt
2 teaspoons baking soda
Grated rind of one lemon
1 cup drained cherries (canned)
Sauce for pudding:
1 cup cherry juice
1 cup sugar mixed with 2 tablespoons of corn starchRecipe
Cream shortening, sugar, add eggs and beat until smooth. Add lemon rind, flour sifted with baking powder and salt. Reserve 1/2 cup of flour and toss drained cherries in it to coat them; add to mixture, folding gently. Bake in greased pan. Over this sprinkle 1/4 cup of sugar mixed with 1 teaspoon ground cinnamon. Bake in 400 degree oven for half an hour.
Sauce:
Stir in hot juice and cook until done. Serve over cheer pudding.
