1 egg slightly beaten
1/3 cup sugar
1/8 teaspoon salt
2 3/4 cups milk
3 Tablespoons quick cooking tapioca
3/4 teaspoon vanilla
1 cup sliced canned or sweetened fresh peachesRecipe
Mix egg, sugar, tapioca, salt, milk in saucepan. Let stand 5 minutes. Cook over medium heat, stirring constantly until mixture comes to a full boil, is slightly thickened (6-8 minutes). Remove from heat. Add vanilla. Cook, fold in peaches, chill.
