    1 Tablespoon plain gelatin soaked in 1/4 cup cold water
    1 cup boiling water
    1/4 cup lemon juice
    1 cup sugar
    3 egg whites or 1 cup heavy cream

    Recipe



    To gelatin soaked in cold water add boiling water, sugar, lemon juice. Strain, set aside to cool stirring occasionally. When mixture is quite thick beat with wire whisk and add stiffly beaten egg whites or stiffly beaten cream. Continue beating until stiff enough to hold shape. Mold, service cold with boiled custard. Tart cherry or current juice may be used in place of lemon juice.
