    Chinese Chicken Wings

    A delicious, licorice-flavored appetizer. The meat falls off of the bones and practically melts in the mouth. A sure hit; expect to be begged for the recipe!


    5 lbs. chicken wings
    1 (11-oz.) bottle Kikkoman soy sauce
    1 (22-oz.) can pineapple juice
    star anise (10 or more pieces)
    1 lb. yellow rock sugar
    1/2 cup sherry
    2 cloves garlic, minced
    4 slices ginger, minced
    peanut oil


    Sauté garlic and ginger in oil. When they start to sizzle, add sherry all at once. Add soy sauce and pineapple juice. Add rock sugar and star anise and stir until sugar is melted. Simmer 15 minutes.
    Add wings (halved; tips removed) and boil for 30 minutes. Cover and let sit at least 3 hours.
