Sally's Salsa with Chips
This one comes from "Saucy Sally" from Gail's Recipe Swap, who said she got it from a judge friend of hers. It's not complicated, but the flavors blend together beautifully and make for a very special recipe.
4 large tomatoes, peeled and chopped (this is Thom's and you need to drain well!)
I use 2 cups of our cherry tomatoes, halved or quartered, depending on size. (still drain for at
least 10 minutes, or the marinade doesn't adhere.)
4 scallions, sliced
1 small can black olives, sliced
1 small can green chilies, chopped
3 Tbsp. olive oil
2 Tbsp. vinegar ( I use my basil vinegar)
1 tsp. minced garlic
salt and freshly ground pepper to taste
Mix all and chill. Serve with tortilla chips.
