Yeast Raised Waffles
Many thanks to Ellen in LA (and Marion Cunningham!) from Gail's Recipe Swap on Epicurious for this incredible "keeper"!! Breakfast was NEVER so good--trust me on this one!
Yeast Raised Waffles
1/2 cup warm water
1 pkg. dry yeast (about 2-1/2 tsp.)
2 cups milk, warmed
1 stick butter, melted
1 tsp. salt (I use less)
1 tsp. sugar
2 cups flour
2 eggs
1/4 tsp. baking soda
Dissolve yeast in warm water. Add the next 5 ingredients. Mix well. (I use a whisk or a mixer.)
Cover and let rise until doubled in size or over night.
Next morning, beat in the eggs and baking soda. Batter is now ready to be cooked. (It will look thin.) Leftover batter can be kept in the fridge for a couple of days.
This is best made the night before.
