Deep Dish Brownies
You can't keep a good brownie recipe down. This is either the first or second runner-up to "Brownies" (the other one's "Rachel's Brownies".) A glass of milk and a couple of these and I'm in seventh Heaven.
3/4 cup (1-1/2 sticks) butter or margarine, melted
1-1/2 cups white sugar
1-1/2 tsp. vanilla extract
3 eggs
3/4 cup all-purpose flour
1/2 cup cocoa
1/2 tsp. baking powder
1/2 tsp. salt
1/2-3/4 cup chopped walnuts (optional)
Preheat oven to 350º F. Grease one 8-inch square pan. Blend melted butter or margarine, sugar and vanilla in a mixing bowl. Add the eggs and beat well with spoon.
Combine the flour, cocoa, baking powder and salt. Gradually add the flour mixture to the egg mixture until well blended. Add walnuts (if used.) Spread the batter into the prepared pan.
Bake at 350º F. for 40 to 45 minutes or until brownies begin to pull away from the sides of the pan. Let brownies cool then cut into squares.
Makes 1-1/2 dozen.
