    Banana Pineapple Bundt Cake

    A nice, basic, moist cake that lets you use up those overripe bananas. (Did I mention that it's also delicious?)


    3 cups all-purpose flour
    1 tsp. baking soda
    1 tsp. ground cinnamon
    2 cups granulated sugar
    1 tsp. salt


    Sift the 5 ingredients together in a large bowl. Dump these next five ingredients into the flour mixture:

    2 cups diced bananas (about 3)
    1 cup vegetable oil
    1 (8-oz.) can crushed pineapple including juice
    1-1/2 tsp. vanilla extract
    3 eggs

    Stir to blend mixture. DO NOT BEAT. Pour into greased Bundt pan. Bake at 350º F. for 1 hour 10 minutes. Set aside to cool on rack without removing from pan.
