Chocolate Cheesecake
This one was found in a very roundabout way. A Danish search engine led me to a website in Kentucky on which this was posted. And I can tell you that it made at least ONE Massachusetts family very happy on Easter Sunday!
CHOCOLATE CHEESECAKE
1/4 cup melted butter or margarine
2 heaping cups of Oreo cookie crumbs (about 26 cookies)
1/4 tsp. ground cinnamon
1 (12-oz.) package semi-sweet chocolate chips
4 (8-oz.) packages cream cheese
2 cups sugar
4 eggs
3 tsp. cocoa powder
2 tsp. vanilla extract
2 cups sour cream
Combine 2 heaping cups of Oreo cookie crumbs, 1/4 cup melted butter or margarine and
1/4 teaspoon ground cinnamon. Press mixture into the bottom and sides of a greased 10 to 12-inch springform pan. Chill. Melt 1-12-oz. package of semi-sweet chocolate chips in a microwave (careful not to burn). Beat 4 8-oz. packages of softened cream cheese until smooth and fluffy. Gradually beat in 2 cups sugar, then 4 eggs, one at a time, beating after each addition. Add melted chocolate chips, 3 teaspoons cocoa and 2 teaspoons vanilla extract; Blend thoroughly. Stir in 2 cups sour cream & then pour into chilled crust. Put a pan of hot water on the floor of the oven. Bake at 350º F. on oven's middle rack for 1 hour and 10 minutes. Cake will be slightly runny in the center, but will firm as it chills. Cool & refrigerate for at least 5 hours before serving. Freezes well.
