Vidalia Onion Casserole
Those sweet succulent Georgia onions! Of course they can be made with the Walla Walla or Texas variety. But as for me: I'll stick with the genuine article when I make this dish.
5 large Vidalia onions
2 sticks butter or margarine, or 1 of each
24 Ritz crackers, crushed
Parmesan cheese
Peel and slice onions into thin rings. Sauté in butter/margarine for 15 to 20 minutes, or until translucent. Put half of onions into a greased casserole. Top with half of the Ritz crumbs and sprinkle with Parmesan. Repeat layers, ending with cheese.
Bake uncovered in a 325º F. oven for about 30 minutes.
