Fat Honey Cookies
This recipe came from a dandy little cookbook that I picked up some time in the early 1970's. The title: "Honey Feast". Sort of 101 things you can do with honey. While there were many other tasty recipes gleaned from that source, this is far and away the one that stands out in my mind. A good, basic spice cookie that satisfies something primal in all of us.
4 cups all-purpose flour
1-1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 tsp. ground cinnamon
2 tsp. ground ginger
1/2 tsp. ground cloves
1 cup (2 sticks) butter
1-1/4 cups honey
1/4 cup sugar
1 egg
Sift the flour with the salt, soda, baking powder and spices. Set aside. Melt the butter in a large, heavy saucepan with the honey and sugar. Cool to lukewarm. Beat in the egg. Add the flour mixture in several additions, beating briefly. If the dough is not easy to handle, chill it.
Preheat oven to 350º F. Lightly grease baking sheets. Shape the cookies by rolling in your palms to 1-1/2-inch balls. Place on baking sheets about 2 inches apart to allow for spreading--one dozen fits well on a large baking sheet. Bake for 15 minutes, until lightly browned. Remove from pans at once and cool on racks. Store in airtight containers.
Makes 4 dozen.
