    Molasses Cookies

    A real humdinger of a cookie recipe, and yet another that comes courtesy of my Aunt Tootie, one of the finest cooks that I have ever known. You can't go wrong with this one, and I hope that you will give it a try.


    1/2 cup (1 stick) margarine
    1/2 cup sugar
    1 egg
    1 cup dark molasses
    1 Tbsp. lemon juice
    3-1/2 cups all-purpose flour
    1 tsp. ground cinnamon
    3/4 tsp. ground cloves
    1/2 tsp. ground ginger
    2 tsp. baking soda
    1/2 tsp. salt
    1/3 cup boiling water


    Cream margarine and sugar. Beat in egg. Add molasses and lemon juice. Blend well. Add dry ingredients to cream mixture. Add boiling water. Mix well and chill.
    Drop by teaspoonfuls onto greased baking sheets. Sprinkle with sugar.
    Bake at 350º F. for 8 to 10 minutes.
