Shrimp Scampi
All right--I know that you purists out there will point out the redundant nature of this recipe's name. It does, after all, translate into "Shrimp Shrimp" from the Italian. But isn't that just one of the joys of American English? We seem to get away with all sorts of linguistic nonsense.
Well, no matter what you call it, this is one very easy and elegant (and delicious) recipe.
6 Tbsp. butter
1 Tbsp. minced green onion
1 Tbsp. olive oil
4-5 cloves minced garlic
2 tsp. lemon juice
2 tsp. white wine
3/4 lb. medium shrimp, shelled and deveined
2 Tbsp. fresh parsley
1/4 tsp. grated lemon peel
dash of Tabasco Sauce
lemon wedges
Over medium heat melt butter and sauté onion, oil, garlic, lemon juice and wine until bubbly. Add shrimp and cook until pink, about 5 minutes. Stir in parsley, lemon peel and Tabasco. Spoon into serving dish and garnish with lemon wedges.
