    Sour Cream Halibut

    I originally posted this recipe on Gail's Recipe Swap in response to a question from my good friend nlb. Her husband had been given "a nice piece of fish" by one of his clients, and she wasn't sure just how she wanted to prepare it. I think that you'll agree that the following was a pretty good solution! P.S. I've also used this recipe successfully with "a nice piece of swordfish".

    SOUR CREAM HALIBUT

    1 cup white wine
    1 tsp. salt
    1 to 1-1/2 lb. halibut fillet
    1 cup mayonnaise
    1/2 cup sour cream
    1/4 cup green onions
    fine breadcrumbs
    paprika


    Mix wine and salt and marinate halibut in
    this mixture for much of the day. Drain
    fish on paper towel; dip both sides in
    breadcrumbs and place in a greased baking
    dish. Mix together mayonnaise, sour cream
    and green onions. Spread over fish.
    Sprinkle top with remaining breadcrumbs and
    paprika. Bake at 500º F. for 20 minutes or
    until fish flakes easily with fork.
