Ann Landers' Meat Loaf
OK, I'll admit that Ann Landers isn't a blood relative or even a close personal friend. But I would have to say that I'd pit her meat loaf recipe against just about any other one that I've ever come across and it would come out the winner.
2 lbs. ground beef
3/4 cup ketchup
1 envelope Lipton's onion soup mix
2 eggs, beaten
1-1/2 cups breadcrumbs
1 (14-1/2 oz.) can Italian tomatoes
or
1 (8-oz.) can Hunt's tomato sauce
1/4 tsp. freshly ground black pepper
In a large bowl combine ground beef with ketchup, soup mix, eggs and breadcrumbs. Mix until well combined. Place in a well-greased 9x5x3-inch loaf pan. Pour tomatoes (or tomato sauce) over top. Bake in a preheated 350º F. oven for about 1 hour. Let rest for 10 minutes before slicing.
Yield: 8 servings
