    BBQ Beef

    Aunt Tootie strikes again! It DOES seem that there's a preponderance of recipes from her. But then again--she DOES know quality when she sees it. This is a recipe that might make even the most devoted vegetarian give pause.


    5 to 6 lbs. beef
    1 (3-oz.) bottle Liquid Smoke
    1 tsp. celery salt
    1 tsp. onion salt
    1 tsp. garlic salt
    1/2 tsp. freshly ground black pepper
    2 tsp. salt
    2 Tbsp. Worcestershire Sauce
    1 bottle barbecue sauce


    Pour Liquid Smoke over beef and sprinkle with celery, onion and garlic salts. Place in pan with tight lid. Refrigerate overnight, turning once.
    Next day, add the pepper, salt and Worcestershire. Cover and cook at 275� F. for 5 hours. Remove meat and pour off juice. Cover with a bottle of barbecue sauce (both sides). Return to pan and roast for 1 more hour at same temperature.
