Eye of the Round Roast
Another one of those recipes whose origins are in the dim and distant past. But a succulent one for those of use who love cutting into "Roast Beast". Salud!
1 2-1/2 to 3 lb. eye of the round roast
1-1/2 cups olive oil
3/4 cup soy sauce
1/4 cup Worcestershire sauce
2 Tbsp. dry mustard
2-1/4 Tbsp. garlic salt
1/2 cup wine vinegar
1/2 cup lemon juice
Cook the roast about 45 minutes per pound at 325º F.-350° F., depending on degree of doneness desired. Pierce roast with fork several times. Combine all other ingredients and pour over roast. Let marinate in refrigerator for several hours.
