Yet another winner from Judy Pickett, my Italian cooking class instructor. Hail, Judy!
2 lbs. ground beef
2-4 eggs
1/2-3/4 cup grated cheese
1 cup Italian breadcrumbs
Mix ground beef with eggs. Mixture should be quite wet. Add cheese and bread crumbs. Form into meatballs. Bake at 350º F. on cookie sheet for 20 minutes. Drain.
Add to sauce, and heat through.
