Recipe
This one'll knock their socks off! I probably own more cookbooks than anybody else that I know. But I found this one while surfing the Internet one day. I've prepared it so many times now that I've lost count, and every time I do, someone asks me for the recipe. That, IMHO, is the mark of a great recipe. Well done, Pat!
Preheat oven to 450 F. Roast the meat covered for 45 minutes. Saut chopped garlic in hot olive oil until soft. Add remaining ingredients. Cook over medium-high heat and heat to boiling. Pour fat off roasted meat. Place onion and lemon slices on top of the meat; pour sauce over. Reduce oven to 350 F. Bake uncovered for another
1-1/2 hours, basting with the sauce every 20 minutes or so.
Serves up to 6.
