    Oven Barbecued Ribs

    List of Ingredients




    6 lbs. country-style pork ribs
    1 large sweet onion, sliced
    1 lemon, thinly sliced

    SAUCE:

    3 cloves garlic, chopped
    olive oil to cover bottom of cooking pot
    1-1/2 cups water
    3/4 cup chili sauce
    1 cup catsup
    1/4 cup brown sugar, packed
    2 Tbsp. Worcestershire sauce
    2 Tbsp. soy sauce
    2 Tbsp. Dijon mustard
    1/2 tsp. cayenne pepper
    1 Tbsp. celery seed
    1/2 tsp. salt

    This one'll knock their socks off! I probably own more cookbooks than anybody else that I know. But I found this one while surfing the Internet one day. I've prepared it so many times now that I've lost count, and every time I do, someone asks me for the recipe. That, IMHO, is the mark of a great recipe. Well done, Pat!

    Preheat oven to 450º F. Roast the meat covered for 45 minutes. Sauté chopped garlic in hot olive oil until soft. Add remaining ingredients. Cook over medium-high heat and heat to boiling. Pour fat off roasted meat. Place onion and lemon slices on top of the meat; pour sauce over. Reduce oven to 350º F. Bake uncovered for another
    1-1/2 hours, basting with the sauce every 20 minutes or so.

    Serves up to 6.
