Rice-a-Roni Meatballs
AKA porcupine meatballs, I suppose. But I guess I've never much cared for that name. This is another one whose origins are shrouded in the mists of time. But I've been enjoying it for years, and now you can, too!!!
1 lb. ground beef
1 package beef-flavored Rice-a-Roni
1 egg, beaten
2-1/2 cups water +
Combine Rice-a-Roni rice/vermicelli packet with ground beef and beaten egg. Shape into small meatballs. Brown. Combine seasoning package with 2-1/2 cups of water. Pour over meatballs. Cover and simmer for 30 minutes. More water can be added, and then flour can be used to thicken the sauce to the consistency of a gravy.
