Honeycomb Muffins
I've been a big fan of Post Honeycomb cereal for more years than I care to think about. So when I found this recipe on the 'Net, I couldn't wait to give it a try. It more than lived up to my expectations.
HONEYCOMB MUFFINS
1 cup all-purpose flour
2 Tbsp. sugar
1 Tbsp. baking powder
1/8 tsp. salt
1/3 cup shortening
1 egg
1 cup milk
3-1/3 cups Post Honeycomb cereal
1 tsp. sugar
1/8 tsp. ground cinnamon
Preheat oven to 400º F. Mix flour, 2 Tbsp. sugar, baking powder and salt in a large bowl. Cut in shortening until mixture resembles coarse crumbs.
Mix 3 cups of the cereal and the milk in another bowl. Let stand for 3 minutes. Stir in egg. Add to flour mixture. Stir until just moistened. (Batter will be lumpy.) Spoon batter into greased muffin pan, filling each cup 2/3 full.
Mix remaining 1/3-cup cereal, 1-tsp. sugar and cinnamon in small bowl. Sprinkle evenly on muffins.
Bake for 20 to 25 minutes or until golden brown.
Yield: 12 muffins
