    Pizza Sauce

    Here's something that I adapted from several recipes that I've found over a period of time. You might want to make your own changes here and there, but this version is just perfect as far as I'm concerned, thank you very much...

    PIZZA SAUCE

    1 (28-oz.) can crushed tomatoes
    2 (6-oz.) cans tomato paste
    1/2 tsp. salt
    1/2 tsp. freshly ground black pepper
    1 tsp. onion powder
    1 heaping Tbsp. oregano
    1 heaping Tbsp. basil
    1 tsp. garlic powder
    1/8 cup olive oil
    1/8 cup red wine (optional)
    2 Tbsp. Parmesan cheese

    This sauce has a quality similar to restaurant flavor, but being freshly made seems to take on a better flavor. Place the crushed tomatoes in heavy saucepan. Add remaining ingredients except for the grated cheese. Simmer 1/2 hour over low heat (or longer if necessary), stirring often. Add cheese last 10 minutes of cooking. The canned grated Parmesan is good in this recipe, as well as fresh.

    Yield: 4 servings
