Broccoli and Cheese Fried Chicken
This is a very unusual(!) fried chicken recipe that comes to us courtesy of one Annis Danko. I never would have thought of combining these ingredients, but they really do work!! Try it...you'll LIKE it!!!
1 (10-1/2-oz.) can cream of broccoli soup
2/3 cup whole milk
5 chicken leg quarters
2-1/2 cups flour
1/2 cup Parmesan cheese
oil for frying
Mix the soup and milk together in a zipper-type bag. Add the chicken to the mixture, seal
the bag and turn until the chicken is well coated. Marinate in the refrigerator for 30 minutes.
Mix the flour and Parmesan cheese together. Dredge the chicken in this mixture, covering the chicken well. Heat 1/2 inch of oil in a deep heavy skillet over medium-high heat until a cube of bread will sizzle. Place the chicken skin side down in the mixture and fry, uncovered, lowering the heat so the chicken doesn't brown too fast. Cook 15 to 25 minutes on each side, turning once, until the chicken is browned and the juices run clear when poked with a fork. Drain on paper towels.
