Here's another of the many great recipes that I've found on Gail's Recipe Swap at epicurious.com. This one was originally posted by Barbara/So. NJ back in 2001. I guess it's probably a basic cacciatore recipe, but if Barbara and her mother called it "garlic chicken & tomatoes" that's good enough for me!

My mom’s Italian recipe–coat the chicken pieces after rinsing, (legs and thighs are especially flavorful) with flour. Brown in olive oil with cut up pieces of garlic. Transfer to plate and absorb oil with a paper towel. Add:

(3 to 4 lbs. chicken pieces)
1 (28-oz.) can imported crushed tomatoes
1/4 cup dry red wine
1/4 lb. sliced mushrooms
3/4 cup diced onion
10-12 diced whole garlic pieces
1 small diced green pepperRecipe
Add black pepper, onion powder and salt to taste. Add 1 bay leaf and a dash of Italian seasoning. My mother simmered this for at least 2 hours, partially covered (it dried out in the oven) and served with mashed potatoes. It still is delicious today. Hope you enjoy this–let me know.
