Lemon Chicken
Citrus and chicken and soy...oh, my!!! A very worthy combination, no matter what you might think.
3 lb. chicken breast, boned and skinned
2 Tbsp. butter
1 Tbsp. vegetable oil
1/4 cup fresh lemon juice
1 clove garlic, minced
1/3 cup chicken stock
1 tsp. soy sauce
1 Tbsp. sugar
2 tsp. cornstarch
1 Tbsp. water
salt, to taste
lemon slices for garnish
Cut chicken into 1/2-inch strips. Place butter and oil in a skillet and quickly stir-fry chicken strips until just barely cooked. Remove chicken strips to a plate. Add lemon juice, garlic, chicken stock, soy sauce and sugar to pan and stir. Mix cornstarch in water and add to pan. Heat mixture until it thickens. Taste and adjust flavors to personal preference. Add sauce to chicken strips and stir until heated through. Garnish with lemon slices. Makes 4 to 6 servings.
