Mustard Chicken
From the late, very much lamented Laurie Colwin, who was not only a talented novelist, but a gifted cook. She died much too soon, and the world is much the poorer for her loss.
3 lbs. chicken pieces
mustard
garlic
thyme
ground black pepper
ground cinnamon
breadcrumbs
paprika
butter
Combine mustard, garlic, thyme, pepper and cinnamon. Coat chicken. Roll in breadcrumbs. Dust with paprika. Dot with butter and bake at 350º F. for about 2 hours. Serve hot or at room temperature.
