    2 to 3 lbs. chicken legs and/or thighs
    1 (8-oz.) bottle any zesty Italian salad dressing
    1/2 cup grated Parmesan cheese
    2 cups Italian-flavored breadcrumbs

    I remember when I first posted this on Gail's Recipe Swap. One of the reactions to it was how unhealthy it is. I mean, let's face it: there IS a lot of sodium in the simple list of ingredients. But a more interesting comment that someone made was that they hated the name. It wasn't until someone else pointed out that they were confusing "Penn State" with "State Pen" as in "penitentiary" that I understood the problem!
    Whatever the name, it's a quick and tasty and, yes VERY salty recipe, and great to pack as a picnic lunch.

    Mix cheese and breadcrumbs. Dip chicken in salad dressing and coat with breadcrumb mixture. Let stand 10 to 15 minutes on a cake rack. Place on a foil-lined cookie sheet and bake at 375º F. for 50 to 60 minutes.

    Note: We made 10 chicken legs and still had plenty of the breadcrumb mixture and salad dressing remaining. We believe this recipe could make at least 14 legs or thighs.
