Peruvian Baked Chicken
I'm pretty sure that I found this recipe on the Internet, but couldn't for the life of me tell you exactly where. I don't know whether or not it's authentic--it could just as easily have been called Sri Lankan Baked Chicken in MY book--but I DO know that it's mighty tasty!!
4 chicken breasts
1 clove garlic, minced
2 Tbsp. vinegar
1 tsp. salt
1 tsp. freshly ground black pepper
1 tsp. ground cumin
1 tsp. dried oregano, crumbled
1 Tbsp. sweet paprika
1 Tbsp. vegetable or olive oil
Preheat oven to 350º F. In a small bowl, combine minced garlic, vinegar, salt, pepper, cumin, oregano, Paprika and oil. Mix thoroughly and pour over the chicken breasts. Bake in a shallow baking dish for 1 hour. Baste occasionally while baking.
Serves 4.
