Date Nut Bread
I love dates, but I know that a lot of people don't. If you're one of those poor devils who doesn't, you'll probably pass this one over. Very much YOUR loss...
2 cups boiling water
1 lb. dates, chopped fine
2 tsp. baking soda
2 eggs
1-1/2 cups sugar
1/2 tsp. salt
2 Tbsp. melted butter
1-1/2 cups chopped walnuts
1/2 cup rum
-or-
1 Tbsp. vanilla extract
3 cups all-purpose flour, sifted
Mix all ingredients together. Put batter into 2 greased and floured loaf pans. Bake at 350º F. for 1 hour.
Yield: 2 loaves.
