    Vidalia Onion Salad

    Another terrific use for those sweet products of the state of Georgia.


    4 Vidalia onions, thinly sliced
    2 Tbsp. sugar (to start with)
    3/4 cup vegetable oil
    1/4 cup vinegar
    1 cup feta cheese, crumbled (optional)
    1/8 tsp. freshly ground black pepper
    1/2 tsp. salt or to taste

    Mix all ingredients together. Put into a 2-quart covered dish and chill for at least 24 hours, stirring occasionally. Good with steak. Adjust sugar to taste. This amount probably has to be adjusted up as original recipe called for 3/4 cup sugar.

    Ron's note: I used 1/4 cup sugar and don't use the feta.
