this recipe initially came years ago from a very dear person who was always feeding a crowd and loving every minute of it, whether the crowd was expected or not!! i have perfected it my own way by changing the ingredients in various ways to create a very tasty casserole!! this is a little time consuming but well worth it. this freezes very well.
List of Ingredients
2 1/2 lb lean ground beef
2 tbl olive oil
2 large onions chopped
6 celery ribs chopped
6 large carrots shredded
2 large cans italian style tomatoes
1 tbl salt
1 tsp black pepper
4 large bay leaves
1 tbl oregano leaves
1 tbl basil leaves
4 cloves chopped garlic
2 10 oz frozen chopped spinach
1 to 2 cups shredded sharp cheddar
1 small box macaroni noodles
1 small box thin spaghetti noodles
Recipe
brown beef, onions, celery, and carrots in olive oil. drain only if needed. add all spices, tomatoes, and spinach. simmer for about an hour or until celery and carrots are tender. while sauce is simmering cook pasta. in large casserole dish beginning with pasta, make layers of pasta and sauce. cover first with parmesan cheese and then the
cheddar. bake at 350 for about 30 minutes.
