    Teresa's Dorito Dredged Chicken

    List of Ingredients

    4 - Chicken Breasts
    1 bag each Salsa Verde Doritos - Baja Picante Doritos
    Lemon or Lime Juice (I prefer to use Lemon)
    Oregano - sprinkle lightly
    Cumin - sprinkle lightly
    Garlic Powder - sprinkle lightly
    Pepper/Salt - to taste
    Olive Oil for frying - approximately 1/4" covering pan

    Recipe

    1.) Smash Doritos in their bag as well as possible, then transfer to a ZipLock bag and continue smashing to almost a fine corn texture (with rolling pin or meat tenderizer).

    2.) Pound out chicken breasts to approximately 1/4'" thickness, season both sides of chicken and set aside.

    3.) In one of the pie pans (you'll need two) place the Dorito crumbs and in the other place the seasoned chicken breasts, Sprinkle the chicken breasts with the Lemon/Lime juice (lighly) then turn over and sprinkle on other side(careful as to not wash off the seasoning) Let stand in Lemon/Lime mixture no more than about 5-10 minutes so that it does not get soggy.

    4.) Take the chicken breasts from their bowl and dip into crumb mixture pressing hard so that the chip mixture adheres......

    5.)Gently place dredged chicken pieces into heated frying pan with olive oil and cook on medium high until done (doesn't take long as the chicken is very thin) !! Try not to disturb chicken too much or crumbs will fall off !!
