    Coconut Creme PIe

    List of Ingredients

    2/3 Cups sugar
    2 1/2 T cornstarch
    1 c milk
    1 T butter
    1 C moist shredded coconut
    6 t sugar
    1/2 t vanilla
    1/2 T salt
    1T flour
    3 egg yolks - slightly beaten
    1/2 t vanilla
    1/4 t cream of tarter
    1/2 t vanilla

    Recipe

    Mix sugar, salt, cornstarch, and flour. Stir in milk gradually. Cook over moderate heat stirring constantly until mixture thickens and boils. Boil 1 min slowly stir in half the mixture in sauce pan. Boil 1 min more stirring constantly. Remove from heat and blend in butter, vanilla and coconut. Pour into baked pie shell.
    Cover with meringue. Bake 8-10 min @ 400.
