    This makes a great appetizer. Vidalia onions work best for this recipe, but any other sweet onion will work. Experiment with different seasonings in the batter. The possibilities are endless!

    List of Ingredients




    1 medium sized onion
    2 cups of plain flour
    1 teaspoon (or to taste)seasoning salt
    1/2 teaspoon black pepper
    1 1/2 cups water
    Oil

    Recipe



    Cut top off onion and peel, leaving root intact. Cut onion with blossom cutter. If you don't have a blossom cutter use a knife to cut 5 sections in the onion stopping 1/2 inch from the bottom. Loosen petals gently with fingers and tap onion's root end on counter to help onion 'flower'. Soak the onion in ice water 5-10 minutes to open petals further.
    Mix flour with seasonings. Mix one cup of dry batter with water to make a wet batter (will be thin).
    1. Place onion in dry mix and coat well.
    2. Place onion in wet batter and coat well.
    3. Place onion in dry mix again and coat well. Use your fingers to get mix between all the petals.
    Use a heavy gauge pot (dutch oven works well) or deep fryer. Fill no more than 2/3 full of cooking oil. Preheat to 375 degrees. Fry onion for 2-3 minutes. Use a large fork inserted in middle of onion to turn onion over and fry additional 2-3 minutes or until brown. Remove from oil and drain on paper towels. Serve with dressing of your choice.
