    Curry Beans & Rice

    List of Ingredients


    • 1 cup dry kidney beans
    • 2 cups cold water for soaking
    • 2 cups water for boiling beans
    • 2 tablespoon oil
    • 1 small onion
    • 2 cloves garlic
    • 1/3 cup tomato sauce
    • 1/2 cup water to add to tomato and beans
    • 1 teaspoon salt
    • 1 teaspoon curry powder
    • 1/2 teaspoon black pepper


    Instructions


    1. Soak dry kidney beans in the cold water overnight.

    2. Drain the water.

    3. Boil beans in the other 2 cups of water & add 1/2 tsp. salt.

    4. Cook 35 to 40 minutes on low.

    5. Fry onion and garlic in a separate pot till light brown.

    6. Add tomato sauce, beans, salt, curry and pepper and cook for 10 min. more.

    7. Serve with rice. (I like to mix them together.)
