Curry Beans & Rice

List of Ingredients
- 1 cup dry kidney beans
- 2 cups cold water for soaking
- 2 cups water for boiling beans
- 2 tablespoon oil
- 1 small onion
- 2 cloves garlic
- 1/3 cup tomato sauce
- 1/2 cup water to add to tomato and beans
- 1 teaspoon salt
- 1 teaspoon curry powder
- 1/2 teaspoon black pepper
Instructions
- Soak dry kidney beans in the cold water overnight.
- Drain the water.
- Boil beans in the other 2 cups of water & add 1/2 tsp. salt.
- Cook 35 to 40 minutes on low.
- Fry onion and garlic in a separate pot till light brown.
- Add tomato sauce, beans, salt, curry and pepper and cook for 10 min. more.
- Serve with rice. (I like to mix them together.)
