* soft tortillas or chapati (try whole-wheat)
* refried beans
* some cooked rice, brown or white
* cooked potatoes, mashed
* shredded cheddar cheese to taste
* salsa to taste
Recipe
Mix together the beans and rice and/or potatoes.
Lay a soft tortilla flat and spread about two tablespoons of the bean mix on the "top" one-fifth of the tortilla. Cover with some shredded cheese. Roll the burrito using the following steps: (1) Gently fold the "top" of the tortilla over the bean mix and cheese. (2) Fold an inch or two of the left side of the tortilla toward the center. (3) Roll the burrito towards you once. (4) Fold an inch or two of the right side of the tortilla toward the center. (5) Finish rolling the burrito. Repeat this process for as many burritos as you wish.
Place the burritos on a microwave-safe plate and cook on high, one minute for each burrito (depending on your oven). Or cook in a conventional oven at about 300 degrees Fahrenheit for about ten or fifteen minutes. Serve with salsa (if desired).
