- 1 cup self rising cornmeal
- 1 cup self rising flour
- 1 egg
- 1 cup buttermilk
- oil
Instructions
- Preheat oven to 425 degrees. Heat iron skillet on stove top with a dab of oil (enough to swirl and coat the bottom and sides of skillet).
- Mix in bowl flour, corn meal and egg.
- Add buttermilk so that the batter is about like pancake batter.
- Once skillet is hot, take a good pinch of corn meal and scatter on bottom of hot skillet. If it sizzles, it is ready.
- Pour cornmeal batter in skillet and cook for about 20-25 minutes or until top is starting to brown.
