Peanut Brittle

- 2 cups sugar
- 1 cup light corn syrup
- 1/3 cup water
- 1 cup raw peanuts
- 2 teaspoons butter
- 1 teaspoon salt
- 2 teaspoons baking soda
Instructions
- Combine sugar, corn syrup and water. Cook slowly until sugar dissolves and mixture reaches 240 degrees, about 30 minutes.
- Add raw peanuts, cook until 295 degrees, about 20 to 30 minutes.
- Do not allow mixture to boil over.
- Stir constantly during the following additions:
- Remove from heat, add butter. Stir until butter has melted completely into sugar mixture.
- Add salt and baking soda. Stir quickly. The sugar/peanut mixture will change colors and rise up in saucepan.
- Pour mixture evenly onto well buttered, shallow pan. Spread as evenly as possible. Work quickly but carefully. Mixture is hot.
- When completely cooled, break into pieces. Store covered.
