Banana Nut Bread 2

- 3 cups all purpose flour
- 2 cups sugar
- 2 teaspoon baking soda
- 1 teaspoon baking powder
- 3 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 teaspoons cloves
- 1 teaspoon salt
- 2 cups shredded apple
- 1/2 cup oil
- 1 cup butter
- 1 1/2 teaspoon vanilla
- 4 eggs (separated)
- 2 cups raisins
- 1 cup buttermilk
- 2 cups chopped pecans
- 1 cup chopped dates (optional)
- 2 cups mashed bananas
- 1 cup apple juice
Instructions
- Preheat oven to 325 degrees.
- Mix flour, cinnamon, salt, baking powder and nutmeg.
- Separate eggs, set aside.
- Stir baking soda into the buttermilk.
- Cream butter and sugar, add egg yolks and vanilla, beating well.
- Add flour mix alternately with mashed bananas.
- Stir in the buttermilk mixture.
- Add pecans, raisins, dates (coat with flour to keep from sticking) and apples.
- Beat egg whites until fluffly, fold into mixture.
- Pour into two loaf pans that have been greased and floured.
- Bake at 325 degrees for one hour or until knife comes out clean.
- If mixture is too dry, add buttermilk in small amounts.
- After cakes are cooled, pour apple juice over the top.
