    List of Ingredients


    • 1/2 cup solid vegetable shortening
    • 1 cup sugar
    • 2 eggs
    • 1 teaspoon vanilla
    • 2 1/4 cups all purpose flour
    • 1 tablespoon baking powder
    • 2/3 cup milk
    • 2 cups fresh or frozen blueberries
    • Topping:
    • 2/3 cup sugar
    • 2/3 cup flour
    • 1/2 cup butter or margarine
    • 1/4 teaspoon almond extract


    Instructions


    1. Preheat oven to 350 degrees.
    2. Lightly grease and flour 2 each 9" round cake pans.
    3. In large mixing bowl, beat shortening and sugar together until light and fluffly.
    4. Add eggs and vanilla.
    5. Beat well.
    6. In another bowl, stir together flour and baking powder.
    7. Add this alternating with milk to egg mixture.
    8. When smooth, divide into 2 pans.
    9. Spoon 1 cup blueberries over batter in each pan.
    10. Topping:
    11. Combine sugar, flour butter and almond extract and mix until crumbly.
    12. Sprinkle over blueberries.
    13. Bake for 35 minutes or until center is cooked.
