    Coconut Pie

    List of Ingredients


    • 1 cup of sugar
    • 4 tablespoons s/r flour
    • 1/2 teaspoon salt
    • 2 cups milk
    • 1 cups pet milk
    • 1 can coconut
    • 2 teaspoons vanilla
    • 2 pastry shells or graham cracker shells


    Instructions


    1. Combine sugar, flour and salt.

    2. Stir in milk.

    3. Cook on stove top stirring constantly until thickened. (will scorch easily)


    4. Cook 15 minutes more, stirring occasionally.


    5. Beat eggs. Gradually stir into hot mixture.


    6. Cook 5 minutes stirring constantly or until thick enough.

    7. Remove from heat, add vanilla.


    8. Pour into cooked and cooled pastry shell or a graham cracker shell.


    9. Let cool and refrigerate.
