    Sour Cream Coconut Cake

    List of Ingredients




    1 package shredded coconut
    1 duncan hines butter recipe golden cake mix
    1/2 cup sour cream
    4 eggs
    1 stick butter (softened)
    2/3 cup water
    1 can cream of coconut (8.5oz)

    Icing:
    1 package cream cheese (softened)
    1 can cream cheese icing or plain vanilla

    Mix cake according to directions on box and adding sour cream plus one egg.

    Bake at 350 degrees until toothpick come out clean.

    Pour a small amount of cream of coconut over shredded coconut and work in with fingers. This will make the coconut not so dry.

    While cake is hot from the oven, poke holes in to of the cake with toothpick and pour warm cream of coconut.

    Icing:

    Mix cream cheese, icing and coconut (less a handful to sprinkle over top of cake) together and spread over cooled cake.

    Sprinkle remaining coconut over top of cake.

    Refrigerate overnight.
