Salmon Patties

List of Ingredients
- 1 can (14 3/4 oz.) salmon, drained thoroughly
- 1/4 cup onion, finely chopped
- 1/4 cup cornmeal
- 1/4 cup flour
- 1 egg
- 3 tbls. mayonnaise
- 1 tsp. salt
- 1/2 tsp. pepper
- oil for frying
Instructions
- Place drained salmon in mixing bowl and flake with a fork.
- Add remaining ingredients and stir until well blended.
- Shape into patties and refrigerate for approx. 30 minutes (this step just ensures they hold together a little better for frying).
- Heat oil in skillet (enough to come up the sides of the skillet about a half inch).
- Once oil is hot, fry until browned on each side.
Final Comments
Half a cup of breadcrumbs can be substituted for the cornmeal and flour and a teaspoon of Old Bay seasoning or seasoned salt can be substituted for the salt & pepper.
