    Vegetable Beef Soup

    List of Ingredients


    • 6 qts stewed tomatoes
    • 2 cans tomato paste
    • 3 large onions
    • 1 bunch of celery (chopped) (use a little or a lot)
    • 1 - 16 oz frozen cut okra
    • 1 package chopped frozen bell peppers
    • 1 can rotel
    • 2 cans english peas
    • 1 can cut carrots
    • 1 cans green beans
    • 2 cans sliced potatoes
    • 1 cup dry elbow macaroni
    • 1 cooked roast and gravy (good use for left overs)
    • 1 lb thinly sliced smoked sausage (optional)


    Instructions


    1. Simmer on low heat until celery is done.


    2. Add cooked roast and gravy (or roast and broth if you boiled it).


    3. Add potatoes, carrots to pot.


    4. Simmer until all seem to be mixed well.


    5. Salt and pepper to taste.


    6. Add more water as needed as it will cook down but don't add too much, it will water the broth down.


    7. If this happens you can add a can of beef broth to bring it back up.
