Fried Green Tomatoes

List of Ingredients
- 1 cup corn meal
- 3/4 tablespoon all purpose flour
- 3/4 tablespoon cornstarch
- 1 teaspoon sugar
- 1 teaspoon seasoned salt
- 1/8 teaspoon cayenne pepper
- black pepper to taste
- 5 green tomatoes (sliced)
- bacon drippings for frying
Instructions
- Combine cornmeal, flour, cornstarch, sugar and seasonings.
- Coat both sides of the tomato slices with the mixture.
- Place on wire rack and let dry for 10 minutes.
- In a large cast iron skillet, heat bacon grease over medium heat and fry tomatoes in a single layer.
- Cook until lightly brown.
- Place on wire rack to cool.
