Lemon Marinated Chuck Roast
List of Ingredients
- 4 pound chuck roast
- 1 teaspoon grated lemon peel
- 1/2 cup lemon juice
- 1/3 cup cooking oil
- 2 Tablespoons sliced green onion
- 4 teaspoons sugar
- 1 1/2 teaspoons salt
- 1 teaspoon Worchestershire sauce
- 1 teaspoon prepared yellow mustard
- 1/8 teaspoon black pepper
Instructions
- Score fat edges of roast. Place meat in a shallow baking dish. Combine lemon peel and juice, cooking oil, green onion, sugar, salt, Worchestershire sauce, mustard and pepper. Pour over roast. Cover and let stand 3 hours at room temperature or overnight in the refrigerator. Remove roast reserving marinade.Grill over medium-hot coals 17-20 minutes. Turn and cook17-20 more minutes for medium-rare.
