Stuffed Peppers
Hubby doesn't like the stuffed pepper recipes where you simmer the peppers in tomato juice, but I found this one in one of my cookbooks, and he really likes this one!
List of Ingredients
- 4 green peppers (I use red or yellow)
- 1 1/2 pounds ground beef
- 2/3 cups chopped onion
- 1 can tomatoes, cut up (I usally buy diced tomatoes)
- 2/3 cups long grain rice
- 2 Tablespoons Worchestershire sauce
- 1 teaspoon dried oregano or basil
- 1 cup American cheese, shredded (I use mild cheddar)
Instructions
- Half peppers lengthwise, removing stem ends, seeds and membranes. Immerse peppers into boiling water for 3 minutes. Sprinkle insides wth salt. Invert on paper towling to drain well.
- In a skillet cook meant and onion tillmeat is brown and onion is tender. Drain fat
- Stir in undrained tomatoes, uncooked rice, worchestershire sauce, basil, 1/2 cup water, 1/4 teaspoon salt and 1/4 teaspoon pepper. Bring to boiling; reduce heat. Cover and simmer for 15-18 minutes or till rice is tender. Stir in 1/4 cup of cheese
- Fill peppers with meat mixture. Place in an 8x8x2 inch baking dish with any remaining meat mixture.
- Bake in a 375 degree oven about 15 minutes or till heated through. Sprinkle with remaining cheese. Let stand 1 to 2 mintues.
