Brittle Ice Cream

Recipe Introduction
Delicious Coffee Ice Cream with that satisfying brittle crunch.
List of Ingredients
- Brittle:
- 8 oz. roasted almonds, chopped (unsalted)
- 1/5 cup oil
- 1/2 cup sugar
- Bottom Layer:
- 3/4 pkg vanilla cookies, crushed
- Chocolate Layer:
- 4 oz. baking chocolate
- 1 stick margerine
- 1 cup confectioners sugar
- 4 eggs, separated
- Ice Cream:
- 8 eggs, separated
- 1/2 cup confectioners sugar
- 1 1/2 tbsp coffee dissolved in a drop of boiling water
- 10 oz. whip topping
Instructions
- Brittle: Brown sugar in oil. sugar should have a caramel color, pour onto a peice of silver foil and let it become hard. Chop in blender into small peices. MIx together with chopped almonds.
- Bottom Layer: Press crushed cookies into cake bekeleh.
- Chocolate Layer: Melt chocolate, margerine and conf sugar in double boiler. Make a snow from egg whites. add chocolate and egg yolks. Pour onto crushed cookies. Sprinkle half of brittle onto chocolate layer and freeze for at least an hour.
- Ice Cream: Beat egg whites until snow forms, gradually add confectioners sugar. Add dissolved coffee to egg yolks and gradually add to snow. In separate bowl beat topping. Stir into egg mixture. Pour into pan. Sprinkle remaining brittle over top. Freeze well.
- Serving Suggestion: serve with a drizzle of chocolate syrup.
