Chicken Lo Mein

Great one pot main course!
List of Ingredients
- 1/2 stick margerine
- 1/2 pkg thin noodles
- 1/2 cup boiling water
- 2 chicken breasts, cut into thin strips or cubes
- 2 tsp onion soup mix
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 can baby corn
- 1 small can mushrooms
- 1/2 pkg green beans, optional
Instructions
- Melt margerine in pot. Add noodles and stir to coat, let brown. Add water, chicken and spices. Cook for 45 minutes. Add vegetables.
Final Comments
I added a can of water chesnuts and frozen sugar snap peas instead of the green beans.
I found that this recipe had too little liquid and started to stick/burn. I would add 1/2 tsp salt, 2 tbsp hot and spicy duck sauce and i would put all ingredients in together with the chicken (including the liquid - cans) and cook for a half hour. I'll update you on how it comes out once i try it this way.
Original recipe stated: Yield 2 servings, i found that it was enough for at least 4 people!
