    Cream of Lima Bean Soup

    List of Ingredients


    • 5 cloves garlic, crushed
    • 2 onions, chopped
    • 2 stalks celery, diced
    • 2 potatoes, cubed
    • 1 cup lima beans
    • 10 cups water
    • 2 carrots, grated or sliced
    • 1 T. salt
    • dash of white pepper


    Instructions


    1. In 4 qt. pot, saute garlic, onions and celery. Add potatoes and water. Add 3/4 cup of beans in boiling bag and 1/4 cup loose. Bring to a boil and simmer for one hour. Puree soup in blender, return to pot. Add beans from boiling bag, carrots and spices. Cook for additional 30 minutes or until carrots are tender. Serve with croutons.
